5 Delicious Reasons to Eat Your Brussels Sprouts

With these recipes, it’s easy being green.

Yes, the humble Brussels sprout has been enjoying a resurgence over the last few years, but there’s more to a great sprout dish than bacon (though yes, we’ll admit, this flavour soulmate does make an appearance or two below). We’re digging through our recipe database to find the best ways to put this hearty veg to work.

1. Baked Brussels Sprout Chips

Crispy and savoury, these Brussels sprout chips are tossed in garam masala and tumeric, but it would be easy to update the flavour profile with other spices.

2. Roasted Potato and Brussels Sprout Salad with Boursin

Crisp roasted potatoes make a more flavourful, defined salad than those that have been boiled; creamy Boursin melts just enough to coat them while they’re still warm. If you like, substitute a crumbled blue cheese, which will soften and add bursts of saltiness to complement the bacon and potatoes.

3. Sablefish with Coconut Curry, Cassava Cake, Brussels Sprouts and Cauliflower

This recipe from Sai Woo pairs buttery-soft sablefish with coconut curry and our fave green veggie.

4. Kale and Brussels Sprout Salad

This hardy winter salad improves after a few hours in the fridge, so you can make it ahead; add the apples and almonds just before serving.

5. Grilled Maple Balsamic Brussels Sprouts

We love these glazed-and-grilled sprouts as a holiday side dish, but there’s no shame in putting this amazing recipe to work year ’round either.
