News Flash! The West Invades the East!
At least in the form of Cactus Club opening up a huge new spot smack in the middle of downtown Toronto.
Usually the opening of a 28th restaurant isn’t a stop-the-presses moment, but when it’s one of our (meaning Western Canada) most iconic brands, and that the new location is 15,200 square feet right in the middle of Toronto, we’re willing to make an exception. It seems like yesterday that we were having potato skins surrounded by kitsch on Vancouver’s West 10th, but in the following years the Cactus Club chain has more or less invented the concept of casual fine dining.
A huge part of that transformation lies with Rob Feenie, who’s been a good friend to the magazine over the years (he taught us how to throw a proper picnic a few summers back). So in honour of the West teaching the East how it’s done, we’re going to celebrate with some of his Potato Salad.
