Smoked Sweet Potatoes with Maple-Orange Butter
Cook these in alongside the turkey for the last two hours.
Wash sweet potatoes and poke with a fork. Brush with oil and place directly on the grill inside the smoker for one hour. Remove with tongs, wrap together in a large piece of foil, and return to smoker for another hour.
Meanwhile, bring butter, maple syrup and orange zest to a simmer in a small saucepan, stirring until smooth.
To serve, peel smoked sweet potatoes and mash with the butter mixture, or cut in half and arrange on a platter, then drizzle warm maple butter over top immediately before serving.
