Chewy Ginger Molasses Crinkle Cookies

Molasses ginger cookies are a holiday classic, and are better than any potpourri for making your house smell wonderful.

  • Yield: Makes 2½ dozen cookies.


½ cup butter

1 cup sugar

½ cup brown sugar

1 large egg

¼ cup molasses

2 cups all-purpose flour

2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

¼ tsp salt

Sugar, for rolling


Preheat the oven to 350˚F. In a large bowl, beat together butter and sugars until pale and light. Beat in egg and molasses.

In a smaller bowl, stir together flour, baking soda,
cinnamon, ginger and salt. Add to molasses mixture and stir until dough comes together.

Roll dough into 1-inch balls and roll in a shallow dish of sugar to coat. Place an inch or two apart on a parchment-lined sheet and bake for 12 minutes, or until cracked and golden around the edges. Transfer to a wire rack to let cool.

VARIATION: Spread the bottoms of half the baked cookies thickly with some cream cheese frosting; sandwich with a second cookie.
