Second Spring Peppermint Tea Cocktail

The name Second Spring comes from an Albert Camus quote, which reads: “Autumn is a second Spring, when every leaf is a flower.” “It was a perfect fit for this autumnal cocktail, with its blue tones, floral ingredients and fresh taste from Organic Peppermint,” says mixologist Todd Zimmerman. This fog coloured, Autumnal, wintery concoction, will surely sooth you, with its tender textures and comforting taste.

1.5 oz Tealeaves Organic Peppermint and Butterfly Pealeaf-Infused Bombay gin (see instructions below)

0.75 oz elderflower liqueur

0.25 oz maraschino liqueur

0.5 oz lemon juice

0.25 oz cream

o.25 oz Orgeat syrup

1 egg white each

1 oz Prosecco (to top up)

2 sprays Tealeaves Peppermint Tincture (see instructions below)


Tealeaves Organic Peppermint and Butterfly Pealeaf-Infused Gin

2 tea bags – Tealeaves Organic Whole Leaf Pyramid tea bags (Master Blend No.2238)

10 oz Gin

5 grams Gin



Tealeaves Organic Peppermint Tincture

1 tea bag – Tealeaves Organic Peppermint Whole Leaf Pyramid tea bags (Master Blend No.2238)

6 0z 151-proof rum



Peppermint and Butterfly Pealeaf-infused Gin

Put all ingredients into an ISI whipping siphon.

Tealeaves Organic Peppermint Tincture

Combine all ingredients for 16 hours.

Remove tea bag and transfer infusion into a cocktail mixer.

Second Spring Cocktail:

Shake and double strain ingredients in coupe.

Top up with Prosecco and garnish with butterfly pealeaf. Enjoy!
