Kaffir Lime Coconut Mousse Canapé
For the holidays, Vancouver’s Lazy Gourmet is serving canapés, and they were kind enough to share some recipes with us, including their delicious Kaffir Lime Coconut Mousse, which you can prepare one of three ways.
- Yield: 1 litre
1⁄4 cup water
1 1⁄2 tbsp gelatin
1 1⁄2 cup coconut milk fat
1⁄2 cup + 1 tbsp (divided) sugar
2 tsp coconut rum
pinch of salt
1 1/2 cup cream
6 kaffir lime leaves
Dissolve gelatin in water, set aside.
Heat coconut milk fat, 1⁄2 cup sugar, rum, salt and crumbled leaves.
Let leaves infuse into milk fat.
Remove leaves, bring milk up to a boil and dissolve gelatin in heated milk. Let cool to room temperature.
Whip cream to medium peaks, slowly adding 1 tbsp of sugar.
Gently fold in cream to coconut mixture.
Reserve in fridge until needed.
Serve it Three Ways
Put the mousse in a piping bag and swirl it into a glass, cone or on a spoon and then top it with toasted coconut sprinkles.
