Another Man’s Gold (Whiskey and Golden Beet Cocktail)

Like most of the cocktails on his bar menu, Dave Warren names “Another Man’s Gold” after a popular mountain climbing route in Squamish. Made for St. Patrick’s Day, this cocktail combines Jameson Irish whiskey with lemon juice, egg white and Warren’s house-made golden beet shrub.

    Golden Beet Shrub

    2 cups golden beets (in small cubes)

    2 cups sugar

    1¼ cup quality apple cider vinegar

    Another Man’s Gold

    2 oz Jameson Irish whiskey

    1 oz golden beet shrub

    ¾ oz lemon juice

    1 oz egg white

    Pickled golden beets, for garnish


    Golden Beet Shrub

    1. Add chopped beets and sugar to a sealable 2 L glass jar. Shake and distribute the sugar then let sit in the fridge for 24 hours.

    2. The next day, add vinegar and shake again to help dissolve the sugar then refrigerate again. Keep shaking the jar every couple of days to help the sugar dissolve. After two weeks, the shrub will develop a complex acidity and sweetness.

    Another Man’s Gold

    1. Add all ingredients to mixing glass.

    2. Dry shake, then add ice and shake again.

    3. Double strain into a coupe glass and garnish with beet skewer.
