Rhubarb Old Fashioned

As a kid, Dave Warren chewed on fresh rhubarb stalks from the garden, dipped in sugar. This cocktail is inspired by his childhood and his dad’s favourite spirit: whiskey.

    Rhubarb Shrub

    2 cups rhubarb (diced)

    1 cup granulated sugar

    1 cup vinegar (apple cider or white)

    Rhubarb Old Fashioned

    2 oz Buffalo Trace bourbon whiskey

    ¼ oz rhubarb shrub

    1 dash Fee Brothers rhubarb bitters

    1 dash Fee Brothers whiskey bitters


    Rhubarb Shrub

    1. Combine the diced rhubarb and sugar in a small bowl, then cover with plastic wrap and refrigerate for four days, stirring at least two times a day.

    2. Strain the liquid, pressing down hard on the rhubarb. Mix the rhubarb syrup with vinegar, pour into lidded jar and refrigerate. Add to cocktails or sparkling water.

    Rhubarb Old Fashioned

    1. Add all ingredients to mixing glass and add ice.

    2. Stir for 15 seconds or until proper dilution.

    3. Strain into rocks glass with large ice cube or sphere.

    4. Finish with grapefruit twist.
