The Beekeeper (Chamomile Tom Collins)
L’Abattoir‘s head bartender Katie Ingram shares her recipe for an updated take on the classic Tom Collins.
1½ oz Botanist Island dry gin
¼ oz Amaro Sibilla
¾ oz fresh lime juice
¾ oz chamomile syrup
2 oz soda water
2 dashes Bittered Sling plum and root beer bitters
6 mint leaves
1. Combine all ingredients (except soda) into a shaker tin and shake vigorously.
2. Add soda to the tin and double strain into a collins glass over ice.
3. Garnish with a few large mint sprigs.
