The ‘Finer Diner Burger’
Fable’s Diner ‘Finer Diner’ Burger recipe is sure to be the hit of any dinner party.
2 X 3 oz grass fed local beef burger patties (supplied by Two Rivers)
1 oz Foie Gras (supplied by La Ferme Game Farm via Two Rivers)
Sliced white onion
5 ml Sherry gastrique reduction poured onto foie gras
15 ml Beef fat mayonnaise (see recipe)
Two slices of American cheese
8 cross sliced pickle
BEEF FAT MAYO INGREDIENTS
4 egg yolks
60g white vinegar
1Tbsp confit garlic
375grams grape seed oil
375grams beef fat.
2 juniper berries
1 star anise
1 cinnamon stick
3 tbsp pickling spice
60 grams salt
360 grams sugar
12 English cucumbers sliced
Combine in pan and bring to 112 Celsius.
BEEF FAT MAYO
Emulsify. (Slowly pour oil and beef fat into other ingredients while mixing in food processor).
(makes 12 whole pickles) Bring all ingredients except pickles to a boil and let it fuse for 15 minutes. Pour over pickles while still warm and leave in mixture for minimum 3 hour. Store unused pickles in the pickling liquid.
Build burger. Top with a sunny-side egg. Served in a fresh locally baked burger bun (supplied by Swiss Bakery)
