Celery Remoulade

This salad dressing from chef Alden Ong of Royal Dinette is exactly what your kale salad needs.

  • Yield: 1 litre



4 yolks

750g grapeseed oil

3 garlic cloves, rasped

1 zest orange

1 zest lemon

2 tbsp Dijon mustard

5 tsp sriracha

2 tbsp worcestirshire sauce

3 tsp smoked paprika


lemon juice

8g capers

8g anchovies


3 shallots, brunoise

1 tbsp house mustard

4 stalks celery, small dice

fine herbs (parsley, tarragon, chives, chervil)


1. Mix together ingredients for mayonnaise. Season with salt and vinegar.

2. Fold in shallots, mustard, celery, and fine herbs into the mayonnaise.
