You're going to want to make this triple-layer parsnip and cranberry cake.
I was chatting with a colleague about my love of beautiful cookbooks, and I know I’m not alone. A friend of mine reads hers in bed, which I’m sure leads to some excellent dreaming. I keep one on my coffee table at all times, so when I’m sucked into another episode of 90 Day Fiancé I can also feel like I’m doing something, maybe, sort of smart..?And Dorie Greenspan is one of those cookbook authors I adore. I’ve had her Baking cookbook as a top 5 for ages—and regularly tote it with me to the summer cabin so I can treat friends to her oatmeal and nutmeg scones. And now she’s released Everyday Dorie: The Way I Cook, which I can see is 100. Percent. My. Jam. There are plenty of whole foods-type recipes like Ginger-Beet Salad Bowls, Mushroom-Bacon Galette, and Roasted Squash Hummus, along with guilty pleasures like Pimento Cheese, and Dark Chocolate Pudding. And of course, the gorgeous food photography that makes these cookbooks the reason why we love to browse through—to imagine the fab dinner parties I will be throwing thanks to her beautiful but super-doable recipes. She’s shared three dynamite recipes with us at Western Living—Herb Butter Chicken, Bourbon-Roasted Pork Loin, and my personal favourite, Triple-Layer Parsnip and Cranberry cake. Click on the links to head over to our Recipe Finder.Anyone coming over for dinner?
