Molasses ginger cookies are a holiday classic, and are better than any potpourri for making your house smell wonderful.

Chewy Ginger Molasses Crinkles Recipe

 

Ingredients

1/2 cup butter

1 cup sugar

1/2 cup brown sugar

1 large egg

1/4 cup molasses

2 cups all-purpose flour

2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

1/4 tsp salt

Sugar, for rolling

Directions

Preheat the oven to 350°F. In a large bowl, beat together butter and sugars until pale and light. Beat in egg and molasses.

In a smaller bowl, stir together flour, baking soda, cinnamon, ginger and salt. Add to molasses mixture and stir until dough comes together.

Roll dough into 1-inch balls and roll in a shallow dish of sugar to coat. Place an inch or two apart on a parchment-lined sheet and bake for 12 minutes, or until

cracked and golden around the edges. Transfer to a wire rack to let cool.

Makes 2 1/2 dozen cookies.

The Variations

Chocolate Molasses Crinkles Replace ½ cup of the flour with cocoa. Shape, roll and bake as directed.

Double Ginger Molasses Crinkles Add ⅓ cup chopped crystallized ginger to the dough. Shape, roll and bake as directed.

Ginger Cream Cheese Sandwiches Spread the bottoms of half the baked cookies thickly with some cream cheese frosting; sandwich with a second cookie.
