5 Hearty and Healthy Mushroom Recipes to Warm Up Winter

Delicious recipes that’ll make you think twice about this underrated vegetable.

The weather has been wet and grey for awhile now (darn you, Raincouver!) and with Groundhog Day coming up, we want to be prepared in case the little guy sees his shadow. Because if we have any chance of surviving six more weeks of winter, we’ll need comfort foods that won’t destroy our New Year’s resolutions (yes…we’re still trying to keep them). The solution? These vegetarian mushroom dishes from the WL Recipe Finder are healthy(ish) and decadent—the perfect combo. So, if you’re like us and aren’t emotionally prepared to handle more of this weather, try one of these recipes to brighten your rainy days.

1. Crostini with Wild Mushrooms and Taleggio

Okay, not the healthiest start…but crostini is too good a snack to pass up, and adding mushrooms and Italian cheese is a great twist on an old classic. Sautée the mushrooms in olive oil instead of butter and feel (slightly less) guilty while staving off your winter blues.

2. Stir-Fried Tofu Batons with Mushrooms

This recipe from Chef Jenny Hui of the Lazy Gourmet is completely vegetarian (and vegan!)—and it’s surprisingly easy to make. Finished with a spicy soy dressing, this is a surefire crowd-pleaser, perfect for your next dinner party or potluck.


3. Mushroom and Spinach Stroganoff

Stroganoff is a winter staple, but there should be nothing stopping you from substituting beef for mushrooms. This slow-cooker recipe is great because you can let it cook while you’re at work and have it ready by the time you get home. Minimal effort required.


4. Sautéed Spinach and Mushrooms

From the (now-closed) Morton’s Steakhouse in Vancouver, this recipe is a great side dish or garnish for steak-lovers and vegetarians alike. Pair it with pan-seared sunchoke terrine or vegan pumpkin and sage mac ’n’ cheese for a vegetarian winter feast.

5. Pappardelle with Mushrooms

Joseph Bastianich and Tanya Bastianich Manuali have created a healthy (vegetarian!) answer to your pasta cravings. Experiment with different kinds of mushrooms depending on your mood and feel free to indulge!
