As the granddaughter of two very Irish immigrants, I had my share of trifle for Christmas dinners, and as a child it as always a bit of a letdown. So pretty and whipped-creamy in the bowl, so full of booze on my plate.Fortunately, my tastes have matured over the years, and the thought of sherry in a dessert is downright appealing (and whipped cream remains so). In celebration of the Queen’s 90th birthday, the Victoria Marriott has introduced a very British menu leading up to the big day on June 11. Think steak and mushroom pie, bangers and mash, fish and chips (along with Pimm’s Cups), and this summery West Coast update on that most classically British dessert, trifle.For those of you that can’t swing by the capital city in time, executive chef Neil Antolin has shared his recipe with us—head on over to the WL Recipe Finder for a little modern nostalgia-making tonight.
