Best of Bridge is a Western Canadian classic: a collection that started as a handbound book of recipes from a group of bridge-playing Calgary pals back in 1975 and has evolved into one of the West’s bestselling cookbook brands. So when we posted the Classy Chicken recipe up online a few years back in an off-handed post about comfort food, should we really have been surprised that it became one of our most-viewed recipes ever? If you haven’t had the pleasure of cooking with cans of soup, consider this your introduction. Classy? we’re not convinced. Comforting, creamy and weirdly satisfying? Absolutely.
3 chicken breasts, skinned and boned ¼ tsp pepper 3 tbsp oil 280 g pkg. frozen asparagus or broccoli (fresh is even better) 284 ml can cream of chicken soup ½ cup light mayonnaise 1 tsp curry powder 1 tsp lemon juice ½ to 1 cup grated cheddar cheese
Cut chicken into bite-sized pieces and sprinkle with pepper. Sauté quickly in oil over medium heat just until opaque (don’t overcook—the chicken will get tough!). Drain. Cook asparagus or broccoli until crunchy. Drain and arrange in bottom of buttered casserole. Place chicken on top. Mix together soup, mayonnaise, curry and lemon juice and pour over chicken. Sprinkle with cheddar cheese and bake, uncovered, at 350°F for 30 to 35 minutes. Serves 6.
