Baker Joanna Schultz opened her gluten-free, nut-free, soy-free and dairy-free bakery Pikanik in White Rock, B.C. back in 2012 for pretty personal reasons—her daughter was diagnosed with gluten and dairy allergies, and she hated to see her missing out. Schultz was recently awarded the Innovator of the Year award from the Canadian Bakers Journal for her you-won’t-miss-what’s-missing bakery (think black forest cupcakes, pumpkin chai donuts, honey sandwich bread), and lucky for us, she’s opened up her vault of recipes to share one with us.
